NOVY comes from the word Novelty and the Scandinavian word for New.
For us, it’s not just a name — it’s a mindset. At NOVY, we’re not tied to a single cuisine or tradition. Instead, we let inspiration flow — from the delicate precision of Classical French cooking, to the bold creativity of modern Japanese cuisine, to the soulful depth found in the kitchens of Indian villages.

It was shaped through collaboration and shared passion across continents and kitchens.
We had the privilege of working with Culture Cauldron, led by Chef Neha and Chef Ashay — artists of flavor and technique who poured their creativity, insight, and heart into every corner of our menu, crafting dishes that truly embody the spirit of NOVY.
